Not only are these brownies vegan and gluten free, but they are also DELICIOUS!

Ingredients list
Can of black beans
Tahini (can substitute any nut butter that you prefer)
Maple syrup
Coconut sugar
Vanilla
Gluten free flour (rice flour ideally)
Cocoa powder
Baking soda
Baking powder
Salt
Walnuts
Chocolate chips
How to make the brownies
1. Start by adding the black beans, tahini, maple syrup, coconut sugar, and vanilla in a food processor or mash them together with the back of a fork. Blend until nice and smooth.
2. Add the flour, cocoa powder, baking soda, baking powder, and salt. Pulse until they are all combined together. Then mix in the chocolate chips and the nuts.
3. Next, spoon the brownie mix into a greased mini cupcake tin. Top with more chocolate chips and walnuts if you have any spare!
4. Bake the brownies at 350F for between 15-20 minutes. You can check if they are ready by inserting a toothpick and ensuring it comes out clean.
Top tips!
Use canned black beans, which have been rinsed and drained. Unsalted or low sodium black beans are best.
Serve with vegan vanilla ice-cream when the brownies are still a bit warm - YUMMY!!!
